

11/2 kgs, of chicken
400 gms, of smoked bacon or a substitute (smoked sausage works)
4 tablespoons of lard
1/2 a cup of plain flower
3 onions (sliced)
2 capsicums seeded and sliced
11/2 lbs of tomatoes ,(skinned and chopped)
2 or 3 cloves of garlic
2 teaspoons of fresh thyme (chopped)
1/2 kg of prawns (peeled)
1/2 kg of mussel meat
(and any other seafood u care to add)
4 cups of long grain rice
2 or 3 teaspoons of hot chilli sambal
1 bunch of spring onions (chopped)
3 tablespoons of fresh parsley (chopped)
6 cups of water
in heavy pot heat lard
brown chicken pieces
remove chicken
add flower to lard and make roux
add chicken back to pot
add bacon or, onions, capsicum, tomatoes, garlic and thyme
keep stirred for 10 minutes
add prawns and fish and shellfish
stir rice into pot with water
add chili sambal
season with salt and pepper to taste
bring to boil and simmer until water is absorbed
add extra water if necessary
mix spring onions and parsley and serve
